When it comes to hassle-free cooking, these chicken foil packet meals are at the top of my list. Similar to slow-cooker recipes, foil-packet recipes require minimal prep, and cleanup is a breeze. This one features a combination of tender chicken and fresh vegetables, giving you a balanced dish that’s customizable to your taste. The packets are baked in the oven, but their portability makes them an ideal campfire recipe for outdoor grilling.

Ingredients for Chicken Foil Packet Meals

Raw chicken breasts, baby carrots, pearl onions, sliced mushrooms, a red bell pepper, a lemon, fresh thyme sprigs, salt, pepper, and a small bowl of flour are arranged on a white surface and wooden board.

  • Boneless, skinless chicken breast halves: This mild, high-protein food is the base for the veggies and herbs in the packets. Flattening them first ensures they cook through evenly.
  • Mushrooms: Sliced fresh mushrooms add rich, earthy umami that complements the chicken. They release moisture as they cook, helping to keep the chicken juicy and tender. Choose a type of mushroom, such as a button or cremini, that won’t overwhelm the more delicate flavors.
  • Baby carrots: Baby carrots bring a natural sweetness to the dish and balance the savory flavors of the chicken and herbs. Their small size makes them ideal for foil packets, ensuring they cook through at the same rate as the other ingredients.
  • Pearl onions: These small, sweet onions add a subtle yet flavorful kick to the foil packets. Peeling fresh pearl onions takes time (they need to be boiled very briefly and transferred to ice water before they can be peeled), but I think it’s worth it for the crisp texture and bright flavor.
  • Red peppers: Sweet red peppers introduce a slight crunch and a pop of color to the packets. Yellow or orange bell peppers would be equally mild and pretty.
  • Black pepper: Pepper’s mild heat enhances the flavors of the chicken and vegetables without overpowering them.
  • Fresh thyme: Fresh thyme infuses the dish with a fragrant and earthy aroma. Its slight lemony note pairs perfectly with the optional lemon wedges for a bright finish. If you’re out of fresh thyme, use our fresh to dried herb conversion ratio and substitute 1 teaspoon of dried thyme.
  • Salt: While salt is optional, it enhances the natural flavors of the chicken and vegetables. Feel free to omit it or use a low-sodium alternative if you’re watching your sodium intake.
  • Lemon: We suggest fresh lemon wedges on the side so everyone can squeeze a bit of fresh juice over the finished dish for a burst of citrusy brightness.

Directions

Step 1: Assemble the packets

Preheat the oven to 375°F. Flatten the chicken breasts to a 1/2-inch thickness and place each one on its own 12-inch square of heavy-duty foil. Layer the mushrooms, carrots, onions and red pepper over the chicken. Sprinkle them with pepper, thyme and, if desired, salt.

Step 2: Seal and bake the packets

Fold the foil around the chicken and vegetables and seal it tightly. Place the packets on a baking sheet and bake them until the chicken juices run clear, about 20 minutes. If desired, serve the meal with lemon wedges.

Chicken Foil Packet Meals Variations

  • Make it spicy: Add a generous pinch of crushed red pepper flakes, chopped fresh jalapeno or a splash of hot sauce to each packet for a spicy kick.
  • Include Mediterranean flavors: Add chopped, pitted olives, capers and halved cherry tomatoes to the packets. Then finish them with a sprinkle of feta cheese and fresh parsley.
  • Flavor it with garlic and herbs: Add minced garlic and dried Italian seasoning to each packet for an Italian twist.
  • Add white wine: To turn the natural juices into a more refined sauce, add a few tablespoons of dry white wine to each packet. It’s a tip I learned in culinary school.
  • Change up the vegetables: Feel free to use this recipe as a blueprint for cleaning out your produce drawer. Sliced onions or leeks, zucchini, yellow squash, green beans and shredded Brussels sprouts would all work well and cook at a similar rate as the chicken.
  • Finish it with fun toppings: You can stick with the recipe’s recommended squeeze of lemon, or, after you open the packets, you can drizzle the meal with olive oil, add a pat of nutty tahini butter or sprinkle it with more fresh herbs.

How to Store Chicken Foil Packet Meals

Store leftover chicken foil packet meals in the refrigerator for three to four days. It’s best to transfer the chicken and veggies from the foil to airtight food storage containers to prevent leaks.

Can you freeze chicken foil packet meals?

You can freeze uncooked foil packets for up to two months. Prepare the packets as directed and then place them in a freezer-safe bag or container. Thaw the packets in the refrigerator overnight, then bake or grill them as directed when you’re ready to cook.

Can you make chicken foil packet meals ahead of time?

You can assemble the packets up to a day in advance and store them in the refrigerator until you’re ready to cook. This makes them a convenient, fast make-ahead dinner option for busy weeknights or easy entertaining. They can also be reheated in the oven at 350º or in the microwave.

Can I use other types of meat in these chicken foil packet meals?

You can replace the chicken with other lean meats, such as pork tenderloin or turkey breast. Cut them to about 1/2-inch thickness, or lightly flatten them so they cook at a similar rate as the chicken. If you use fish or shrimp, check the packets after about 10 minutes of baking, as they will cook much faster than other meats. (The vegetables will also be more al dente in this case.)

Can I cook foil packets in a slow cooker?

While foil packets are usually baked or grilled, you can also cook them in a slow cooker. Place them in a slow cooker and cook them on low for four to six hours, or until the chicken is fully cooked.

What sides go well with chicken foil packet meals?

These chicken foil packet meals pair well with almost any side you can think of, from hearty garlic bread and pasta side dishes to light green side salads. Any side that would go great with roast chicken—like smashed potatoes or roasted broccoli—would work here too. One of my favorite options is quinoa tabbouleh because it’s fresh and bright yet satisfying.
