1 Cup Coconut Milk
1 Tbsp Coconut Powder/ Flour
1 Tbsp Date Syrup
Few Drops Stevia
¼ Cup Sliced Almonds + Cashews
3. Peda
2 Cups Cashew Nuts (Powdered)
2 Tbsp Thick Date Paste
Few Drops Stevia
¼ Cup Dry Date Powder
1-½ Tsp Cardamom/ Elaichi Powder
Pistachios for Garnish
4. Rabdi
100 ml Almond + Cashew Milk
100 ml Water
2 Tbsp Sweet Potato (Boiled and mashed)
3-4 Stevia Drops
½ Cup Warm Water
½ Tsp Cardamom/ Elaichi Powder
Few Saffron Strands
1 Tsp Mixed Nuts
5. Burfee
½ Cup Almonds
½ Cup Cashews
2 Dates
Stevia Drops as per Taste
½ Cup Thinly Sliced Peeled and Toasted Almonds
1 Tsp Poppy Seeds/ Khaskhas
¼ Tsp Cardamom/ Elaichi Powder
¼ Tsp Nutmeg Powder

Directions
- Bakheer (Gud Chawal ki Kheer)
- Wash and soak the rice in water.
- Drain the water from the rice.
- In a pressure cooker, add the rice, date paste, and water, and cook for 4 to 5 whistles.
- Once the pressure has naturally released, open the cooker lid and gently mash the rice.
- Meanwhile, bring the vegan milk and water to a boil, then switch off the flame.
- In a kadhai, dry roast the cashews and raisins until golden brown.
- Add the vegan milk and water, fried dry fruits, stevia, and cardamom powder to the cooked Bakheer.
- Mix well and serve hot.
- Date & Coconut Kulfi
- In a large mixing bowl, pour the coconut milk and coconut cream, then beat the mixture with an electric hand mixer.
- Once fluffy and creamy, gradually add the coconut flour, stevia, and date syrup while continuously mixing.
- Beat until all ingredients are well combined, check for sweetness, and add more stevia if needed.
- Mix in the sliced nuts.
- Pour the mixture into a container, place it in the freezer, and let it set for 3 hours.
- Peda
- Blend the ingredients, adding enough dry date powder to create the right consistency.
- Shape the mixture into flattened balls or pedas.
- Garnish with pistachios.
- Rabdi
- Boil the milk and water well, then add the mashed sweet potato.
- Cook well until the milk thickens.
- Dissolve saffron strands in a cup of warm water and add this to the milk mixture, stirring well.
- Stir in cardamom powder and cook for 3-4 minutes.
- Add 3-4 stevia drops and nuts on top, then empty the entire Rabdi into a bowl to cool.
- Refrigerate for 1 hour and serve chilled.
- Burfee
- Soak washed and peeled almonds, cashews, and chopped dates separately overnight.
- The next morning, remove the water from the nuts and wash them well, but retain the water from the dates.
- Put the nuts, dates, 4 drops of stevia, cardamom, and nutmeg in a blender or food processor jar and blend to a fine paste.
- Add half of the sliced toasted almonds and half of the poppy seeds to the nut paste and mix in gently.
- Add more stevia if needed.
- Grease a baking tray with oil.
- Pour the paste into the greased tray, sprinkle the remaining poppy seeds and toasted almonds evenly on top, and press them in slightly.
