How to Make Cauliflower Tacos
The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.
1. Season & Roast Cauliflower. Toss cauliflower florets with taco seasoning and a bit of oil and then roast until until tender, browned, and caramelized. That is the key to making delicious cauliflower tacos that are filled with texture.

2. Prepare Avocado Sauce. While the cauliflower is roasting, use that time to prepare the avocado sauce which adds a bright, fresh, creamy contrast to the crispy cauliflower.
3. Assemble Cauliflower Tacos. You can opt to use your cauliflower taco meat just as you would classic beef taco meat, but my favorite way to serve the roasted taco-seasoned cauliflower is on a warmed flour tortilla shell drizzled with avocado sauce.
Storage Instructions
Cauliflower Tacos are best consumed immediately after assembling to ensure that the texture of the cauliflower stays crispy.
However, if you have leftover roasted cauliflower and leftover avocado sauce, store both separately in airtight containers in the refrigerator for 3-4 days. Reheat the cauliflower by broiling for 2-3 minutes per side. Do not microwave, as the cauliflower will lose its texture and become mushy. Assemble the cauliflower on tortillas and serve with the leftover avocado sauce.

Made with perfectly spiced roasted cauliflower and finished with a bright avocado sauce, these Cauliflower Tacos make a delicious and wholesome taco recipe.
Ingredients 0.5x1x2x3x
- ▢1 head cauliflower
- ▢1 tablespoon extra virgin olive oil
- ▢2 teaspoons Homemade Taco Seasoning, or store-bought taco seasoning
Avocado Lime Sauce
- ▢1 large Hass avocado
- ▢1 medium lime, juice and zest
- ▢½ teaspoon kosher salt
For Serving
- ▢tortillas
- ▢queso freso or feta cheese, optional
- ▢Pickled Red Onions, optional
- ▢chopped cilantro, optional
Instructions
- Preheat oven to 425℉/215℃. Cut 1 head cauliflower into 1-inch segments, discarding the thick stem.
- Drizzle cauliflower with 1 tablespoon extra virgin olive oil and season with 2 teaspoons Homemade Taco Seasoning. Toss to coat evenly with seasonings and then spread out on a large baking sheet. Use 2 pans if needed so that the cauliflower is not overcrowded and can roast properly.
- Roast for 20 minutes, flip and then continue to roast for an additional 15-20 minutes, or until the cauliflower is tender and browned.
- For the avocado sauce, place the flesh of 1 large Hass avocado into a blender or mini food processor. Add in juice and zest 1 medium lime, and ½ teaspoon kosher salt and blend until smooth and creamy, scraping down sides if needed. If you need to thin out your sauce, add in 1 tablespoon of cold water.
- To serve Cauliflower Tacos, place roasted cauliflower onto tortilla or lettuce wrap. Drizzle with avocado sauce and top with pickled red onions, cilantro, and cheese if using.
Notes
Taco Seasoning: In place of homemade taco seasoning, use ¼ teaspoon each of salt, garlic powder, cumin, paprika, onion powder, and chili powder.
Leftovers: Store leftover roasted cauliflower in the refrigerator for 4-5 days. Reheat by broiling for 2-3 minutes. Don’t microwave the cauliflower or it will lose its texture.
