  • 10 large eggs

  • 1/4 cup heavy cream or whole milk

  • 1/2 cup feta cheese, crumbled

  • 1/2 cup fresh baby spinach, finely chopped

  • 1/2 cup cherry tomatoes, quartered

  • 1/4 cup red onion, finely diced

  • 1/2 tsp garlic powder

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly cracked black pepper

  • Non-stick cooking spray (or olive oil for greasing)

Directions

  • Preheat and Prep: Preheat your oven to 375°F (190°C). Generously grease a standard 12-cup muffin tin with non-stick cooking spray. (Note: Using silicone muffin liners makes removal entirely effortless and is highly recommended!)
  • Whisk the Eggs: In a large mixing bowl, crack all 10 eggs. Add the cream (or milk), garlic powder, salt, and black pepper. Whisk vigorously for 1 to 2 minutes until the mixture is completely smooth, pale, and frothy.
  • Add the Fillings: Stir the finely chopped spinach, quartered cherry tomatoes, diced red onion, and crumbled feta cheese directly into the egg mixture.
  • Fill the Muffin Tin: Using a ladle or a measuring cup, carefully pour the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 of the way full. (They will puff up significantly in the oven, so do not overfill them).
  • Bake: Place the muffin tin in the center of the preheated oven. Bake for 18 to 22 minutes. You will know they are done when the centers are firm to the touch and the edges are slightly golden brown.
  • Cool and Remove: Remove from the oven and let the mini frittatas cool in the tin for at least 5 minutes. As they cool, they will deflate slightly—this is completely normal. Run a butter knife around the edges to loosen them, then transfer to a wire rack.
  • Serve or Store: Serve immediately while hot, or let them cool completely before transferring to an airtight container for meal prep!

Notes

  • The Secret to Avoiding Sticking: Eggs notoriously stick to metal pans. If you don’t have silicone muffin liners, you must grease your metal pan very generously with a heavy coating of cooking spray or butter.
  • Custom Flavor Combinations: Swap the feta and tomatoes for sharp cheddar, diced ham, and bell peppers for a Denver-omelet style variation, or add cooked crumbled sausage for a hearty kick.
  • Storage and Freezing: Store baked mini frittatas in an airtight container in the refrigerator for up to 5 days. They can also be frozen for up to 2 months. Reheat in the microwave for 30–60 seconds until warmed completely through.
