  • 1 whole chicken (about 4 to 5 lbs), giblets removed

  • 3 tbsp unsalted butter, softened at room temperature

  • 1 tbsp olive oil

  • 1 large lemon, halved

  • 1 whole head of garlic, cut in half crosswise

  • 1 large yellow onion, thickly sliced

  • 4 large carrots, peeled and cut into 2-inch chunks

  • 1 lb baby potatoes, halved

  • 1 large bunch of fresh thyme and rosemary

  • 1 tbsp fine sea salt (plus more for vegetables)

  • 1 tsp freshly ground black pepper (plus more for vegetables)

Directions

  • Preheat and Prep: Preheat your oven to 425°F (220°C). In a large roasting pan or a heavy 12-inch cast-iron skillet, toss the onion slices, carrots, and baby potatoes with the olive oil, a large pinch of salt, and a pinch of black pepper. Spread them into an even layer to act as a bed for the chicken.
  • Dry the Chicken (Crucial Step): Using paper towels, thoroughly pat the inside of the cavity and the entire outside of the chicken completely dry.
  • Season and Stuff: Generously season the inside cavity with salt and pepper. Stuff the halved lemon, the halved head of garlic, and half of the fresh thyme and rosemary sprigs directly into the cavity.
