Ingredients

  • For the Ladoo Mixture:
  • 2 cups fine chickpea flour (besan)

  • ½ cup grass-fed ghee (melted and warm)

  • ⅓ cup unrefined monk fruit sweetener or erythritol powder (finely powdered)

  • 1 tsp pure cardamom powder

  • 2 tbsp chopped almonds and pistachios (plus extra for topping)

  • A pinch of edible golden turmeric or saffron threads (for natural rich color)

Directions

  • Melt Ghee & Add Besan: Heat the grass-fed ghee in a heavy-bottomed pan or kadhai over low heat. Add the chickpea flour (besan) immediately, stirring continuously with a wooden spatula.
  • Roast Slowly: Roast the besan on low heat for 15 to 18 minutes, stirring constantly so it cooks evenly without burning. As it roasts, the color will turn a rich golden-brown and release a deeply nutty, fragrant aroma.
  • Incorporate Saffron & Cardamom: Stir in the pinch of turmeric or saffron threads and the pure cardamom powder during the last 2 minutes of roasting, mixing well.
  • Cool Slightly: Remove the pan from the heat source and let the roasted mixture cool down for 10 minutes until it is safe and comfortable to handle with your hands.
  • Sweeten & Shape: Stir in the powdered monk fruit sweetener and chopped nuts until fully combined. Take small portions of the warm mixture and press them firmly between your palms to shape them into smooth, round ladoos.
  • Garnish & Set: Press an almond slice or pistachio piece onto the top of each ladoo. Let them rest at room temperature for 30 minutes to firm up completely before serving your Besan Ladoo!
