Ingredients

  • 2 thick slices of artisan sourdough or whole-grain bread

  • 1 large, ripe avocado

  • 2 large eggs

  • 1 tsp freshly squeezed lemon juice

  • 1 tsp extra-virgin olive oil or butter (for cooking the eggs)

  • 1/4 tsp kosher salt, plus more for the eggs

  • 1/4 tsp freshly ground black pepper

  • 1/4 tsp red pepper flakes (optional, for a spicy kick)

  • Fresh chives or microgreens for garnish

Directions

  • Toast the thick slices of sourdough bread in a toaster or on a dry skillet until they are deeply golden and crispy on the outside.
  • While the bread is toasting, halve the ripe avocado, remove the pit, and scoop the flesh into a small bowl.
  • Add the fresh lemon juice, kosher salt, and black pepper to the avocado. Use a fork to roughly mash the mixture until it is creamy but still retains some chunky texture.
  • Heat the olive oil or butter in a non-stick skillet over medium heat. Crack the eggs into the skillet and fry them to your preference (sunny-side up or over-easy work best for a runny yolk). Season the eggs with a small pinch of salt and pepper.
  • To assemble, spread the mashed avocado generously and evenly over the two slices of warm toast.
  • Carefully slide one cooked egg onto each piece of avocado toast.

  • Storage: Avocado toast is best enjoyed fresh. If you must prepare elements in advance, keep the avocado pit in the mashed avocado bowl and press a piece of plastic wrap directly onto the surface of the mash to prevent oxidation in the fridge.
