Origin Greek chicken risoni

Risoni, widely known in the United States as orzo, is a type of short-cut pasta shaped like a large grain of rice. In Greek cuisine, this pasta is referred to as kritharaki and is a deeply foundational ingredient used in soups, salads, and traditional baked casseroles like Giouvetsi (meat and pasta baked in a rich tomato sauce). By adapting these classic, slow-cooked Mediterranean flavor profiles into a rapid stovetop skillet, modern home cooks capture the exact same health benefits of the Mediterranean diet—which heavily emphasizes lean proteins, heart-healthy olive oil, and fresh vegetables—transforming a labor-intensive Sunday staple into a highly functional, deeply nourishing weekday meal.

Why I Love This Recipe

I love how this recipe transforms simple pantry staples and a few fresh Mediterranean ingredients into a genuinely crave-worthy, cohesive centerpiece with almost zero active prep. It completely eliminates the sluggish, heavy feeling that often accompanies massive plates of traditional pasta, relying instead on a bright, acidic lemon broth to naturally glaze the risoni. It is one of the absolute best quick and easy healthy dinner ideas because the pasta cooks directly in the same skillet as the chicken, absorbing all the savory pan drippings as it swells. You can serve your Greek chicken risoni classically straight from the pan, toss in extra spinach for a burst of greens, or serve it chilled the next day as a fantastic pasta salad.

Tips for the Perfect Skillet

To achieve beautifully distinct, chewy pasta rather than a gummy, broken paste, managing your pan heat and liquid absorption is absolutely critical. First, you must lightly toast the dry risoni in the residual olive oil and garlic for about 60 seconds before adding any broth. This is an essential expert pasta-cooking technique; toasting the dry pasta creates a protective starch barrier that prevents it from turning mushy as it simmers. Furthermore, always remove the skillet from the heat before folding in the fresh feta cheese. Boiling feta will cause it to separate and turn rubbery, whereas folding it into the residual heat ensures your Greek chicken risoni achieves a flawlessly creamy, luxurious finish.

Ingredients

  • For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized cubes

  • 1 tbsp extra virgin olive oil

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • 1 tsp fine sea salt and ½ tsp freshly ground black pepper

  • For the Risoni (Orzo):

  • 1 tbsp extra virgin olive oil

  • 1 medium yellow onion, finely diced

  • 3 cloves garlic, finely minced

  • 1 cup dry risoni (orzo) pasta

  • 2 ½ cups low-sodium chicken broth

  • ½ cup cherry tomatoes, halved

  • ⅓ cup Kalamata olives, pitted and halved

  • 2 generous handfuls of fresh baby spinach

  • 2 tbsp fresh lemon juice (about 1 medium lemon)

  • ½ cup feta cheese, crumbled

  • For Garnish: Fresh dill or parsley, extra lemon wedges

Directions

  • Season the Chicken: In a medium bowl, toss the cubed chicken with 1 tablespoon of olive oil, dried oregano, garlic powder, sea salt, and black pepper until completely coated.
  • Sear the Meat: Heat a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken in a single layer. Let it cook undisturbed for 3 to 4 minutes to develop a golden-brown crust, then toss and cook for another 3 minutes until fully cooked through. Remove the chicken to a clean plate and set aside.
  • Sauté the Aromatics: Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil to the empty skillet (leave the browned chicken bits!). Add the finely diced onion and sauté for 3 to 4 minutes until soft and translucent. Stir in the minced garlic and cook for 1 more minute until highly fragrant.
  • Toast the Risoni (Crucial Step): Add the dry risoni pasta to the skillet. Stir continuously for 1 to 2 minutes, allowing the pasta to toast slightly and absorb the savory oils from the pan.
  • Simmer and Plump: Pour in the chicken broth and use your spoon to scrape up any browned bits from the bottom of the pan. Bring the liquid to a gentle boil, then immediately reduce the heat to low. Cover with a tight-fitting lid and simmer for 10 to 12 minutes, stirring occasionally to prevent the pasta from sticking, until the risoni is tender and most of the liquid is absorbed.
  • Combine and Wilt: Remove the lid. Stir the cooked chicken (and any resting juices) back into the skillet. Add the halved cherry tomatoes, Kalamata olives, and fresh baby spinach. Toss gently for 1 to 2 minutes until the spinach is completely wilted and the chicken is warmed through.
  • The Creamy Finish: Remove the skillet entirely from the heat. Stir in the fresh lemon juice and gently fold in the crumbled feta cheese.
  • Serve: Garnish your fragrant Greek chicken risoni with fresh dill and serve immediately straight from the hot skillet!

Notes

  • Vegetarian Swap: To make this a robust meatless meal, swap the chicken for 1 can of rinsed chickpeas or butter beans, and use vegetable broth instead of chicken broth.
  • Cheese Variations: If you don’t love the pungent bite of feta, freshly grated Parmesan or Pecorino Romano melts beautifully into the risoni and provides a similarly salty, savory finish.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. As the risoni sits, it will absorb all the remaining moisture; simply add a splash of water or broth when reheating on the stovetop to restore the creamy texture.
