  • 1.5 cups blanched almond flour or fine oat flour

  • ⅓ cup melted coconut oil or grass-fed butter

  • 2 tbsp unrefined monk fruit sweetener or erythritol & ¼ tsp fine sea salt

  • For the Sugar-Free Pumpkin Custard:
  • 1.5 cups organic canned pumpkin puree (pure pumpkin, not pie filling)

  • 1 cup unsweetened almond milk or full-fat coconut milk

  • ⅓ cup unrefined monk fruit sweetener or powdered erythritol

  • 3 large pasture-raised eggs

  • 1.5 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp ground nutmeg, and ½ tsp sea salt

  • 1 tsp pure vanilla extract

Directions

  • Preheat & Form Crust: Preheat your oven to 375°F (190°C). In a bowl, mix the almond flour, melted coconut oil, sweetener, and sea salt until a dough forms. Press it evenly into a 9-inch pie dish and prick the base with a fork. Blind-bake for 10 minutes.
  • Whisk Custard Base: In a large mixing bowl, whisk together the pasture-raised eggs, organic pumpkin puree, almond milk, monk fruit sweetener, vanilla extract, and warming spices until completely smooth and uniform.
  • Pour into Crust: Pour the creamy sugar-free pumpkin custard mixture directly into your partially baked pie crust, smoothing the top gently with a spatula.
