  • 4 large Honeycrisp or Granny Smith apples, peeled, cored, and sliced

  • 1 tbsp fresh lemon juice & 1 tsp pure vanilla extract

  • ⅓ cup unrefined monk fruit sweetener or erythritol

  • 1.5 tsp ground cinnamon & ¼ tsp ground nutmeg

  • 2 tbsp arrowroot powder (for a clean fruit-thickening glaze)

  • For the Buttery Pecan Oat Crumble:
  • 1 cup certified gluten-free rolled oats & 1 cup blanched almond flour

  • ½ cup chopped pecans or walnuts

  • ⅓ cup unrefined monk fruit sweetener or coconut sugar

  • ½ tsp fine sea salt

  • ⅓ cup melted coconut oil or small cubes of cold grass-fed butter

Directions

  • Preheat & Prep Dish: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or shallow cast-iron skillet with coconut oil or grass-fed butter.
  • Toss Apple Slices: In a large bowl, combine the sliced apples, lemon juice, vanilla extract, monk fruit sweetener, ground cinnamon, nutmeg, and arrowroot powder. Toss thoroughly until every apple slice is coated, then transfer them evenly into your prepared baking dish.
  • Mix Crumble Topping: In a separate mixing bowl, combine the rolled oats, almond flour, chopped pecans, sweetener, and sea salt.
