Ingredients

  • For the Barfi Mixture:
  • 2.5 cups unsweetened fine desiccated coconut flakes

  • 1 cup blanched cashew flour or fine cashew powder

  • 1 cup full-fat coconut milk or rich almond milk

  • ⅓ cup unrefined monk fruit sweetener, erythritol, or clean sweetener of choice

  • 2 tbsp grass-fed ghee

  • 1 tsp pure cardamom powder & a generous pinch of saffron strands

  • 2 tbsp chopped pistachios and edible silver leaf (optional, for garnish)

Directions

  • Melt Ghee & Toast Coconut: Heat grass-fed ghee in a heavy-bottomed non-stick pan over medium-low heat. Add the unsweetened desiccated coconut and cashew flour, sautéing gently for 3-4 minutes until lightly aromatic without browning.
  • Pour in Coconut Milk: Pour the full-fat coconut milk and monk fruit sweetener directly into the pan. Stir continuously to prevent lumps and incorporate everything smoothly.
  • Simmer Until Thick: Cook the mixture over medium-low heat, stirring constantly for 10 to 12 minutes, until the liquid evaporates and the mixture pulls away cleanly from the sides of the pan into a cohesive dough. Stir in the cardamom powder and saffron.
  • Press into Tray: Transfer the warm coconut mixture into a greased or parchment-lined square baking pan. Press it down firmly and evenly using a spatula or the flat bottom of a glass.
  • Garnish & Chill: Sprinkle the chopped pistachios evenly over the top, pressing them gently into the surface. Place the pan in the refrigerator for at least 1 to 2 hours to firm up completely.
  • Slice & Serve: Invert the tray onto a clean cutting board, peel away the parchment paper, and slice the barfi into neat squares or traditional diamond shapes. Enjoy your Coconut Barfi!
