Ingredients

  • 4 salmon fillets (about 6 oz each), skin-on or skinless

  • 2 tbsp extra-virgin olive oil

  • 3 cloves garlic, finely minced

  • 1 tbsp fresh lemon juice (plus extra lemon wedges for serving)

  • 1 tsp dried oregano or Italian seasoning

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly cracked black pepper

  • 2 tbsp fresh parsley or dill, finely chopped (for garnish)

Directions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Prep the Salmon: Pat the salmon fillets completely dry with paper towels. (Removing excess moisture is the secret to getting a slightly crispy exterior rather than a steamed texture). Place the fillets skin-side down on the prepared baking sheet.
  • Season: Drizzle the extra-virgin olive oil evenly over each fillet. Rub the minced garlic, dried oregano, kosher salt, and black pepper into the top of the salmon. Squeeze the fresh lemon juice over the fish just before it goes into the oven.
  • Roast: Place the baking sheet in the preheated oven. Roast for 12 to 15 minutes, depending on the thickness of your fillets. The salmon is perfectly cooked when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C) in the thickest part.
  • Broil (Optional): For a beautiful, golden-brown crust, turn your oven broiler on high for the last 2 minutes of cooking. Watch it very closely so the garlic does not burn!
  • Garnish and Serve: Remove the salmon from the oven. Let it rest for 2 to 3 minutes to lock in the juices. Garnish generously with the fresh chopped parsley or dill, and serve immediately alongside your favorite roasted vegetables or grains.

Notes

  • Skin-On vs. Skinless: Leaving the skin on helps insulate the fish from the heat of the pan and prevents it from drying out. Even if you don’t eat the skin, it is easily removed after cooking!
  • Checking for Doneness: If you don’t have a meat thermometer, gently press a fork into the thickest part of the fillet and twist slightly. If it flakes easily and is opaque all the way through, it is ready.
  • Storage: Store leftover roasted salmon in an airtight container in the refrigerator for up to 3 days. It can be gently reheated or eaten perfectly chilled.
