  • 2 stalks celery, finely diced

  • 4 cloves garlic, finely minced

  • 1 (14.5 oz) can crushed tomatoes (or diced tomatoes with juices)

  • 3 ½ cups low-sodium chicken broth

  • 1 ½ cups long-grain white rice, rinsed well

  • 1 tbsp Cajun or Creole seasoning

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • ½ tsp cayenne pepper (adjust for heat)

  • 1 lb raw large shrimp, peeled and deveined

  • For Garnish: ½ cup spring onions (scallions), finely sliced, and fresh parsley

Directions

  • Brown the Proteins: Heat the olive oil in a large, heavy-bottomed Dutch oven or deep skillet over medium-high heat.
