  • 1 tbsp low-sodium soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sriracha or red chili flakes (adjust for heat)

  • For the Stir-Fry:

  • 8 oz dried wide rice noodles (Pad Thai or Pad See Ew style)

  • 2 tbsp peanut oil or vegetable oil

  • 1 lb boneless, skinless chicken breasts (or thighs), thinly sliced

  • 3 cloves garlic, finely minced

  • 2 large eggs, lightly beaten

  • 1 ½ cups fresh bean sprouts

  • ½ cup spring onions (scallions), cut into 1-inch pieces

  • For Garnish:

  • ⅓ cup roasted peanuts, roughly chopped

Directions
