Origin Ginger chicken

Stir-fried chicken infused with ginger is a beloved staple across various regional Chinese cuisines, particularly in Cantonese and Sichuan cooking. Historically, ginger was utilized not just for its sharp, warm flavor, but for its medicinal properties in traditional Eastern medicine to balance “cold” ingredients and aid in digestion. As Chinese culinary techniques spread globally, the classic stir-fry evolved into countless variations, adapting to local palates with the addition of sweet glazes and thickened sauces. Today, recognizing the profound health benefits of fresh ginger—which is incredibly rich in gingerol, a substance with powerful anti-inflammatory and antioxidant properties—modern home cooks celebrate this vibrant dish as a functional, deeply nourishing comfort food.

Why I Love This Recipe

I love how this recipe completely eliminates the need for heavily processed, store-bought stir-fry sauces that are often packed with artificial thickeners and excessive amounts of refined sugar. It takes basic pantry staples and fresh aromatics, transforming them into a genuinely crave-worthy, cohesive centerpiece with almost zero active prep. It is one of the absolute best quick and easy healthy dinner ideas because the intense heat of the wok does all the heavy lifting. You can serve it classically over a bed of steamed jasmine rice, toss it with stir-fried broccoli and bell peppers, or fold it into crisp lettuce cups for a fantastic low-carb appetizer.

Tips for the Perfect Stir-Fry

To achieve incredibly tender meat and a thick, glossy sauce rather than dry chicken swimming in a watery broth, managing your meat preparation and heat is absolutely critical. First, you must briefly marinate the chicken in a mixture of soy sauce and cornstarch before cooking. This is an essential expert velveting technique that creates a protective starch barrier around the meat, keeping it unbelievably moist over high heat. Furthermore, you must prepare all of your ingredients before you turn on the stove. Stir-frying happens in a matter of minutes, so having your ginger minced and your sauce mixed ensures your Ginger chicken cooks flawlessly without burning.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch bite-sized cubes

  • 2 tbsp avocado oil or vegetable oil (divided use)

  • For the Marinade:

  • 1 tbsp low-sodium soy sauce

  • 1 tbsp cornstarch

  • For the Ginger Sauce:

  • 3 tbsp fresh ginger, peeled and finely grated (do not substitute with dry powder)

  • 3 cloves garlic, finely minced

  • ⅓ cup low-sodium soy sauce

  • 3 tbsp water or low-sodium chicken broth

  • 2 tbsp brown sugar or honey

  • 1 tbsp rice vinegar

  • 1 tsp toasted sesame oil

  • Slurry: 1 tsp cornstarch mixed with 1 tbsp cold water

  • For Garnish: 2 spring onions (scallions), thinly sliced, and 1 tsp toasted sesame seeds

Directions

  • Velvet the Chicken (Crucial Step): In a medium bowl, toss the cubed chicken with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch until every piece is evenly coated. Let it sit for 5 to 10 minutes while you prep the other ingredients.
  • Whisk the Sauce: In a small bowl, combine the grated fresh ginger, minced garlic, soy sauce, water, brown sugar, rice vinegar, and toasted sesame oil. Whisk until the sugar is mostly dissolved. Set aside.
  • Sear the Meat: Heat 1 tablespoon of avocado oil in a large wok or wide skillet over high heat. Add the marinated chicken in a single layer. Let it cook undisturbed for 2 to 3 minutes to develop a nice golden sear, then toss and cook for another 3 minutes until browned on all sides and cooked through. Remove the chicken to a plate.
  • Reduce the Glaze: Lower the heat to medium. Pour the prepared ginger sauce directly into the empty skillet. Let it bubble and simmer for 1 minute so the ginger and garlic release their aromas.
  • Thicken: Give your cornstarch slurry a quick stir (cornstarch settles at the bottom) and pour it into the bubbling sauce. Stir constantly for 30 to 60 seconds until the sauce becomes dark, glossy, and thick like syrup.
  • Toss and Serve: Immediately return the cooked chicken to the wok. Toss vigorously until every piece of meat is heavily coated in the sticky glaze. Remove from the heat.
  • Garnish: Top your hot Ginger chicken with sliced spring onions and toasted sesame seeds. Serve immediately over steaming hot rice!

Notes

  • Ginger Prep Trick: The easiest way to peel fresh ginger is by scraping the skin off with the edge of a standard metal spoon! It perfectly navigates the bumps without wasting the flesh.
  • Adding Vegetables: If you want to make this a one-pan meal, stir-fry a cup of snap peas or sliced bell peppers in the wok right after you remove the chicken, then add them back in at the end with the sauce.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. The ginger flavor actually deepens overnight. Reheat gently in the microwave with a splash of water to loosen the sticky glaze.
