  • 3 to 4 dried shiitake mushrooms

  • 4 cups low-sodium vegetable broth (or water)

  • 3 tbsp low-sodium soy sauce (or tamari)

  • 1 tbsp white miso paste

  • 1 tbsp rice vinegar

  • For the Noodles & Toppings:

  • 2 portions dried ramen noodles (discard the seasoning packets)

  • 1 tbsp olive oil or vegetable oil

  • 8 oz fresh cremini or shiitake mushrooms, thinly sliced

  • 1 small head of baby bok choy, quartered lengthwise

  • 2 spring onions (scallions), thinly sliced

  • Optional: Soft boiled eggs, chili oil, and toasted sesame seeds for garnish

Directions
