  • 3 tbsp extra-virgin olive oil

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

  • ½ lb Spanish chorizo (cured), sliced into half-moons

  • 1 medium yellow onion, finely diced

  • 1 red bell pepper, diced

  • 4 cloves garlic, finely minced

  • 2 medium tomatoes, grated (discard the skins)

  • 1 tsp smoked paprika (pimentón)

  • 1 generous pinch of high-quality saffron threads, dissolved in 2 tbsp warm water

  • 4 cups low-sodium chicken or seafood broth (warmed)

  • 2 cups Spanish short-grain rice (Bomba or Calasparra)

  • ½ cup frozen peas, thawed

  • 1 lb large raw shrimp, peeled and deveined (leave tails on for presentation)

  • ½ lb fresh mussels or clams, scrubbed and cleaned

  • 1 tsp fine sea salt (or to taste)

  • For Garnish: 1 fresh lemon, cut into wedges, and fresh flat-leaf parsley

Directions

  • Sear the Proteins: Heat the olive oil in a traditional 15-inch paella pan (or the widest, shallowest heavy-bottomed skillet you own) over medium-high heat.   • Add the Rice (Crucial Step): Sprinkle the Bomba rice evenly across the entire pan, ensuring it is fully submerged in the liquid. Gently shake the pan to settle the rice. From this point forward, do not stir the rice!
  • Simmer: Reduce the heat to medium-low. Let the paella simmer uncovered and undisturbed for 15 minutes. The rice will slowly swell and absorb the golden broth.
  • Add the Seafood: Nestle the shrimp and the cleaned mussels (hinge-side down) into the rice. Scatter the peas over the top. Continue to cook undisturbed for another 8 to 10 minutes, until the shrimp are pink, the mussels have opened, and the liquid is completely absorbed.
  • Develop the Socarrat: Turn the heat up to medium-high for just 1 to 2 minutes. Listen closely for a crackling, popping sound and let the bottom layer of rice toast and caramelize (watch carefully so it doesn’t burn).
  • Rest and Serve: Remove the pan from the heat. Cover it lightly with a clean kitchen towel or foil and let it rest for 5 to 10 minutes to finish steaming. Garnish your stunning Paella recipe with fresh lemon wedges and chopped parsley. Serve immediately!

Notes

  • Discard Unopened Shells: If any mussels or clams refuse to open after the cooking and resting process, discard them immediately.
