  • 1 medium ripe banana (the spottier, the sweeter!)

  • 2 large eggs

  • 1/2 cup rolled oats (use certified gluten-free if needed)

  • 1 scoop (about 30g) vanilla or unflavored protein powder (whey or plant-based)

  • 1/4 cup unsweetened almond milk (or milk of choice)

  • 1 tsp baking powder

  • 1/2 tsp ground cinnamon

  • 1/2 tsp pure vanilla extract

  • Pinch of sea salt

  • Coconut oil or butter (for greasing the pan)

Directions

  • Blend the Batter: In a high-speed blender, add the ripe banana, eggs, rolled oats, protein powder, almond milk, baking powder, ground cinnamon, vanilla extract, and a pinch of salt.
  • Blend on high for 30 to 45 seconds until the batter is completely smooth and the oats have broken down. Let the batter rest in the blender for 2 to 3 minutes. (This allows the oats to absorb the liquid and thicken slightly).
  • Heat the Pan: Heat a large non-stick skillet or griddle over medium-low heat. Lightly grease the surface with a small amount of coconut oil or butter.
  • Pour and Cook: Pour the batter directly from the blender onto the hot skillet to form your pancakes (about 1/4 cup of batter per pancake).
  • Cook for 2 to 3 minutes on the first side. Watch for small bubbles to form on the surface and check that the edges look set and slightly dry.
  • Flip: Carefully flip the pancakes with a wide spatula. Cook for another 1 to 2 minutes on the second side until golden brown and cooked all the way through.
  • Serve: Transfer the cooked pancakes to a warm plate. Top generously with sliced bananas, a dollop of Greek yogurt, a drizzle of pure maple syrup, or a spoonful of peanut butter. Serve immediately!

Notes

  • Choosing a Protein Powder: Whey protein tends to yield the fluffiest results. If you are using a plant-based protein powder (like pea or brown rice protein), the batter might be a bit thicker. Simply add an extra splash of almond milk to reach a pourable consistency.
  • Make it Chocolate: For a decadent, dessert-like breakfast, swap the vanilla protein powder for chocolate protein powder and add 1 tablespoon of unsweetened cocoa powder to the blender!
  • Freezer Storage: These freeze perfectly! Let the pancakes cool completely, place them in a zip-top freezer bag with a small square of parchment paper between each one, and freeze for up to 2 months. Reheat straight from frozen in the toaster.
