Ingredients

  • 1 large head of cauliflower

  • 1 tbsp extra-virgin olive oil or avocado oil

  • 1 clove garlic, finely minced (optional)

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly cracked black pepper

  • 1 tbsp fresh lemon or lime juice

  • Optional Garnishes: Fresh chopped cilantro or parsley

Directions

  • Prep the Cauliflower: Wash the head of cauliflower thoroughly and pat it completely dry. (Moisture is the enemy of fluffy cauliflower rice!) Remove all the green leaves and chop the cauliflower into medium-sized florets.
  • Rice the Cauliflower (Food Processor Method): Place the florets into the bowl of a food processor fitted with the “S” blade. Do not overfill; work in two batches if necessary. Pulse the machine in 1-second bursts until the cauliflower breaks down into small, rice-sized pieces. Be careful not to over-process, or it will turn into mush.
  • Rice the Cauliflower (Box Grater Method): If you do not have a food processor, simply grate the large florets against the medium-sized holes of a standard box grater.
  • Sauté the Aromatics: Heat a large skillet over medium heat. Add the olive oil. If using garlic, add it now and sauté for 30 seconds until fragrant.
  • Cook the Rice: Add the riced cauliflower to the skillet. Sprinkle with the kosher salt and black pepper. Toss well to coat the cauliflower in the oil.
  • Steam and Sauté: Cook for 3 to 5 minutes, stirring frequently. You want the cauliflower to soften slightly and become tender, but still retain a slight bite (al dente). Do not add any water or cover the pan with a lid, as this will trap steam and make the rice soggy.
  • Finish and Serve: Remove the skillet from the heat. Squeeze the fresh lemon or lime juice over the top to brighten the flavor. Garnish with fresh herbs if desired, and serve immediately hot!

Notes

  • The Secret to Avoiding Mush: Never add water to the pan, and never cover it with a lid while cooking. Cauliflower already contains a massive amount of water, and covering it will result in a soggy, wet puree rather than fluffy rice.
  • Storage: Raw, riced cauliflower can be stored in an airtight container in the refrigerator for up to 4 days. Cooked cauliflower rice will stay fresh in the fridge for up to 3 days.
  • Freezing: You can freeze raw cauliflower rice! Spread the riced pieces on a baking sheet, freeze until solid, and then transfer to a freezer bag. When ready to eat, sauté directly from frozen (do not thaw first).
