Origin Paella recipe

The rich culinary tradition of Paella traces its roots to the mid-19th century near the Albufera lagoon in Valencia, on the east coast of Spain. Originally a humble, rural dish prepared by farmers and laborers over an open wood fire, it was meant to utilize short-grain rice and whatever local ingredients were available—such as rabbit, snails, and flat green beans. As the dish migrated toward the Mediterranean coastline, the traditional Paella Valenciana evolved into Paella de Marisco (seafood paella) and Paella Mixta (a combination of meats and seafood). Today, recognizing the profound health benefits of the Mediterranean diet—which heavily features lean seafood, olive oil, and fresh vegetables—modern home cooks celebrate this vibrant, saffron-scented masterpiece as a highly functional, nutrient-dense centerpiece that perfectly balances clean eating with robust, historical indulgence.

Why I Love This Recipe

I love how this recipe transforms simple pantry staples and a dynamic mix of proteins into a genuinely crave-worthy, highly interactive family meal with an incredible presentation. It completely eliminates the sluggish, heavy feeling that often accompanies heavy cream-based dishes, relying instead on a clean, flavorful broth and a powerhouse blend of paprika and saffron to naturally plump the rice. It is one of the absolute best impressive yet easy healthy dinner ideas because the wide pan does all the hard work to meld the flavors together and create that coveted crispy bottom layer. You can serve your Paella recipe classically straight from the pan in the middle of the table, pair it with a crisp green salad, and enjoy the communal experience of sharing a truly authentic meal.

Tips for the Perfect Socarrat

To achieve beautifully distinct, flavorful grains of rice and the legendary socarrat (the caramelized, crispy crust of rice at the bottom of the pan) rather than a gummy, mushy porridge, managing your rice type and stirring technique is absolutely critical. First, you must use a short-grain Spanish rice like Bomba or Calasparra; these grains absorb three times their volume in liquid without bursting or turning mushy. This is an essential expert paella-making technique. Furthermore, once you add the broth and distribute the rice evenly in the pan, you must stop stirring. Continuously stirring the rice will release excess starches, turning your beautiful Paella recipe into a sticky risotto. Leaving it completely undisturbed over the heat is the only way to develop that delicious, crispy bottom crust.

Ingredients

  • 3 tbsp extra-virgin olive oil

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

  • ½ lb Spanish chorizo (cured), sliced into half-moons

  • 1 medium yellow onion, finely diced

  • 1 red bell pepper, diced

  • 4 cloves garlic, finely minced

  • 2 medium tomatoes, grated (discard the skins)

  • 1 tsp smoked paprika (pimentón)

  • 1 generous pinch of high-quality saffron threads, dissolved in 2 tbsp warm water

  • 4 cups low-sodium chicken or seafood broth (warmed)

  • 2 cups Spanish short-grain rice (Bomba or Calasparra)

  • ½ cup frozen peas, thawed

  • 1 lb large raw shrimp, peeled and deveined (leave tails on for presentation)

  • ½ lb fresh mussels or clams, scrubbed and cleaned

  • 1 tsp fine sea salt (or to taste)

  • For Garnish: 1 fresh lemon, cut into wedges, and fresh flat-leaf parsley

Directions

  • Sear the Proteins: Heat the olive oil in a traditional 15-inch paella pan (or the widest, shallowest heavy-bottomed skillet you own) over medium-high heat. Add the chicken pieces and season with a pinch of salt. Cook for 4 to 5 minutes until browned. Add the sliced chorizo and cook for 2 more minutes until the fat renders and coats the chicken. Push the meat to the outer edges of the pan.
  • Create the Sofrito: In the center of the pan, add the diced onion and red bell pepper. Sauté for 5 minutes until soft. Add the minced garlic and grated tomatoes, cooking until the mixture reduces into a thick, dark jammy paste (this is your flavor base).
  • Toast the Spices: Stir in the smoked paprika, quickly mixing it into the sofrito so it doesn’t burn, then incorporate the chicken and chorizo back into the center.
  • Add the Broth and Saffron: Pour in the warm broth and the dissolved saffron threads. Bring the liquid to a rolling boil.
  • Add the Rice (Crucial Step): Sprinkle the Bomba rice evenly across the entire pan, ensuring it is fully submerged in the liquid. Gently shake the pan to settle the rice. From this point forward, do not stir the rice!
  • Simmer: Reduce the heat to medium-low. Let the paella simmer uncovered and undisturbed for 15 minutes. The rice will slowly swell and absorb the golden broth.
  • Add the Seafood: Nestle the shrimp and the cleaned mussels (hinge-side down) into the rice. Scatter the peas over the top. Continue to cook undisturbed for another 8 to 10 minutes, until the shrimp are pink, the mussels have opened, and the liquid is completely absorbed.
  • Develop the Socarrat: Turn the heat up to medium-high for just 1 to 2 minutes. Listen closely for a crackling, popping sound and let the bottom layer of rice toast and caramelize (watch carefully so it doesn’t burn).
  • Rest and Serve: Remove the pan from the heat. Cover it lightly with a clean kitchen towel or foil and let it rest for 5 to 10 minutes to finish steaming. Garnish your stunning Paella recipe with fresh lemon wedges and chopped parsley. Serve immediately!

Notes

  • Discard Unopened Shells: If any mussels or clams refuse to open after the cooking and resting process, discard them immediately.
  • The Rice Rule: If you cannot find Bomba rice, Arborio is an acceptable substitute, though it will yield a slightly creamier texture. Do not use long-grain white rice or basmati, as they will not cook properly in this wide-pan method.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet with a splash of broth or water.
