Ingredients

  • 2 large whole-wheat or spinach tortillas (10-inch)

  • 1/2 lb high-quality deli turkey breast, thinly sliced

  • 1 medium ripe avocado

  • 1 tbsp fresh lemon or lime juice

  • 1 cup fresh baby spinach or mixed greens

  • 1/2 cup cucumber, julienned or thinly sliced

  • 1/2 cup red bell pepper, thinly sliced

  • 1/4 cup shredded carrots

  • 2 tbsp hummus or whipped cream cheese (for spreading)

  • Kosher salt and freshly cracked black pepper

Directions

  • Prep the Avocado: In a small bowl, mash the ripe avocado with the fresh lemon or lime juice, a pinch of kosher salt, and a crack of black pepper until it reaches a smooth, spreadable consistency.
  • Prepare the Tortillas: Lay the tortillas flat on a clean cutting board or work surface.
  • Spread the Base: Spread 1 tablespoon of hummus (or cream cheese) evenly over the bottom half of each tortilla, leaving about an inch of space around the edges. Spread the mashed avocado directly over the hummus layer. (The sticky spreads act as a barrier to keep the tortilla from getting soggy and help hold the wrap together!)
  • Layer the Veggies: Pile the fresh baby spinach, sliced cucumbers, red bell peppers, and shredded carrots over the avocado spread.
  • Add the Protein: Layer the thinly sliced deli turkey evenly over the top of the vegetables.
  • Tuck and Roll: Fold the left and right sides of the tortilla inward about 1 to 2 inches. Starting from the bottom (the side closest to you with the fillings), roll the tortilla tightly upward, keeping the side flaps tucked in, until you have a firm, sealed wrap.
  • Slice and Serve: Use a sharp knife to cut the wraps in half on a diagonal. Serve immediately, or wrap tightly for later!

Notes

  • Preventing a Soggy Wrap: If you are making these ahead of time for meal prep, make sure your vegetables (especially the cucumbers) are patted completely dry before assembling. Placing the turkey layer on the very bottom against the tortilla can also protect the bread from vegetable moisture.
  • Low-Carb Option: Skip the tortilla entirely and roll the turkey, avocado, and vegetables up inside large, crisp romaine lettuce leaves or collard green wraps!
  • Spice it up: Add a layer of sliced jalapeños, a dash of hot sauce, or swap the plain hummus for a spicy roasted red pepper hummus for a massive flavor kick.
