  • 2 cups whole wheat flour (plus extra for dusting)

  • 1/2 tsp kosher salt

  • 1/4 cup extra-virgin olive oil or avocado oil

  • 2/3 cup very warm water (not boiling, just warm to the touch)

Directions

  • Mix the Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour and the kosher salt.
  • Add the Wet Ingredients: Make a small well in the center of the flour. Pour in the olive oil and the warm water.
  • Form the Dough: Use a sturdy wooden spoon or your hands to mix the ingredients together until a shaggy dough begins to form.
  • Knead: Turn the dough out onto a lightly floured surface. Knead it by hand for 3 to 4 minutes until it becomes smooth, elastic, and slightly tacky (but not sticky). If it feels too dry, add a teaspoon of warm water; if it feels too wet, add a sprinkle of flour.
  • Rest the Dough (Crucial Step): Divide the dough into 8 equal-sized balls. Place them on a plate, cover them with a damp kitchen towel, and let them rest at room temperature for at least 15 minutes. Do not skip this step! Resting relaxes the gluten and makes them much easier to roll out.
  • Roll it Out: Preheat a large cast-iron skillet or non-stick pan over medium-high heat. While it heats, use a rolling pin to roll each dough ball out into a thin, 8-inch circle on a lightly floured surface.
  • Cook: Carefully transfer one rolled-out tortilla to the hot, dry skillet (no oil needed in the pan). Cook for 45 to 60 seconds until large bubbles form on the surface and golden-brown spots appear on the bottom.
  • Flip and Finish: Flip the tortilla with a spatula and cook for another 30 to 45 seconds on the second side.
  • Keep Warm: Transfer the cooked tortilla to a plate and immediately cover it with a clean kitchen towel to trap the steam and keep it soft and pliable. Repeat with the remaining dough!

  • The Secret to Softness: Stacking the tortillas and keeping them covered with a towel immediately after they come out of the pan is the ultimate secret to preventing them from drying out and cracking.
  • Storage: Let the tortillas cool completely under the towel. Store them in an airtight zip-top bag in the refrigerator for up to a week.
  • Reheating: To restore their perfect pliability, wrap the tortillas in a damp paper towel and microwave for 15 seconds, or heat them individually in a dry skillet for 10 seconds per side.
