Ingredients

  • 3 cups liquid egg whites (from a carton is highly recommended for ease)

  • 1 cup fresh baby spinach, roughly chopped

  • 1/2 cup red bell pepper, finely diced

  • 1/4 cup red onion, finely diced

  • 1/3 cup reduced-fat feta cheese or goat cheese crumbles

  • 1 tsp garlic powder

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • Non-stick cooking spray (avocado oil or olive oil spray)

Directions

  • Preheat your oven to 350°F (175°C).
  • Generously coat a standard 12-cup muffin tin with non-stick cooking spray. Do not skip this step, as egg whites are notoriously sticky and will cling to an ungreased pan!
  • Evenly distribute the chopped baby spinach, diced red bell pepper, diced red onion, and feta cheese crumbles among the 12 muffin cups. They should be about half to two-thirds full of the dry ingredients.
  • In a large measuring cup or mixing bowl with a pour spout, aggressively whisk the liquid egg whites with the garlic powder, kosher salt, and black pepper until fully combined and slightly frothy.
  • Carefully pour the seasoned egg white mixture into each muffin cup, filling them almost to the top. The egg whites will seep down around the vegetables.
  • Bake in the preheated oven for 18 to 22 minutes, or until the centers are completely set and the edges are lightly golden brown. They will puff up significantly in the oven but will slightly deflate as they cool.
  • Remove the muffin tin from the oven and let it sit on a wire rack for 5 minutes.
  • Run a butter knife around the edge of each muffin to loosen it, then pop them out of the tin. Serve immediately while warm!

  • Freezing Instructions: Let the baked muffins cool completely to room temperature. Wrap them individually in plastic wrap, then place them in a large freezer-safe zip-top bag. They will keep in the freezer for up to 2 months.
  • Reheating: To reheat from frozen, simply unwrap a muffin, wrap it lightly in a damp paper towel, and microwave on high for 60 to 90 seconds until heated through.
