  • 1 cup unsweetened almond milk (or coconut milk for extra creaminess)

  • 1/2 medium avocado, pitted (fresh or frozen)

  • 1 cup fresh organic spinach (for natural green color)

  • 1 scoop vanilla keto-friendly protein powder (or unflavored collagen peptides)

  • 1/4 tsp pure peppermint extract (adjust slowly, mint is strong!)

  • 1 tbsp keto-friendly sweetener (like Monk Fruit or Erythritol), optional

  • 1 tbsp sugar-free dark chocolate chips or raw cacao nibs

  • 1 cup ice cubes

Directions

  • In the basin of a high-speed blender, combine the unsweetened almond milk, half avocado, fresh spinach, vanilla protein powder, pure peppermint extract, and keto-friendly sweetener (if using).
  • Add the ice cubes directly on top of the liquid and soft ingredients.
  • Blend on high speed for 45 to 60 seconds until the mixture is completely smooth, thick, and vibrant green. The avocado should make the texture incredibly velvety with no visible spinach flakes remaining.
  • Stop the blender and remove the lid. Add the sugar-free dark chocolate chips or raw cacao nibs.
  • Pulse the blender 2 to 3 times for just a few seconds. You want to break the chocolate into small, drinkable flakes, but you do not want to completely pulverize them into the liquid.
  • Pour the thick smoothie directly into a tall, chilled glass.

  • Freeze Your Avocado: For the absolute best, ice-cream-like texture, buy a bag of frozen avocado chunks or freeze your own ripe avocado halves ahead of time. It acts as a substitute for a frozen banana, thickening the smoothie without adding any carbohydrates.
  • Protein Powder Sweetness: If your vanilla protein powder is already heavily sweetened, be sure to taste the smoothie before adding any extra monk fruit or erythritol to avoid making it overly sweet.
