Ingredients

  • 6 medium bell peppers (any color, top sliced off and seeds removed)

  • 1 lb lean ground beef (or ground turkey)

  • 1 tbsp extra-virgin olive oil

  • 1/2 cup yellow onion, finely chopped

  • 3 cloves garlic, minced

  • 1 can (15 oz) diced tomatoes, undrained

  • 1 cup cooked brown rice or quinoa

  • 1 tbsp tomato paste

  • 1 tsp Italian seasoning (or equal parts dried oregano and basil)

  • 1 tsp kosher salt

  • 1/2 tsp freshly cracked black pepper

  • 1 cup shredded sharp cheddar or Monterey Jack cheese, divided

  • Fresh parsley, chopped (for garnish)

Directions

  • Preheat and Prep: Preheat your oven to 375°F (190°C). Spray a 9×13-inch baking dish lightly with non-stick cooking spray. Arrange the hollowed-out bell peppers upright in the dish.
  • Sauté the Aromatics: Heat the olive oil in a large skillet over medium-high heat. Add the finely chopped onion and sauté for 3 to 4 minutes until softened. Add the minced garlic and cook for 1 more minute until highly fragrant.
  • Brown the Meat: Add the lean ground beef to the skillet. Cook, breaking it apart with a wooden spoon, for 6 to 8 minutes until entirely browned and no longer pink. Drain any excess grease from the pan.
  • Build the Filling: Stir the undrained diced tomatoes, cooked brown rice, tomato paste, Italian seasoning, kosher salt, and black pepper into the skillet with the beef. Reduce the heat to low and let it simmer for 5 minutes so the flavors can beautifully meld together.
  • Add the Cheese: Remove the skillet from the heat and fold in 1/2 cup of the shredded cheese until slightly melted and binding the mixture together.
  • Stuff the Peppers: Use a spoon to generously fill each bell pepper to the top with the meat and rice mixture.
  • Bake: Pour about 1/4 cup of water into the bottom of the baking dish (this creates steam to help soften the peppers). Cover the dish tightly with aluminum foil and bake for 30 minutes.
  • Melt and Serve: Remove the foil, sprinkle the remaining 1/2 cup of cheese evenly over the tops of the stuffed peppers, and return to the oven uncovered for 10 to 15 minutes until the peppers are tender and the cheese is bubbly and golden brown. Garnish with fresh parsley and serve hot!

Notes

  • Low-Carb Option: Swap the cooked brown rice for an equal amount of sautéed cauliflower rice, and use a sugar-free tomato sauce to make this entirely keto-friendly!
  • Pre-Cooking the Peppers: If you prefer your peppers extra soft rather than tender-crisp, you can drop the empty peppers into a pot of boiling water for 3 minutes before stuffing them.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 3 months. Thaw completely in the fridge before reheating.
