Ingredients

  • 8 large eggs

  • 2 cups fresh callaloo leaves, thoroughly washed and finely chopped (substitute fresh spinach if callaloo is unavailable)

  • 1 tbsp extra-virgin olive oil or avocado oil

  • 1/2 medium yellow onion, finely diced

  • 2 cloves garlic, minced

  • 1/2 red bell pepper, finely diced

  • 1 scallion (green onion), thinly sliced

  • 1 sprig fresh thyme (or 1/2 tsp dried thyme)

  • 1/4 tsp scotch bonnet pepper, minced (optional, for heat)

  • 1/4 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • 2 tbsp unsweetened almond milk (or milk of choice)

Directions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, aggressively whisk together the eggs, unsweetened almond milk, kosher salt, and black pepper until the mixture is completely smooth and slightly frothy. Set aside.
  • Heat the olive oil or avocado oil in a 10-inch cast-iron skillet (or any oven-safe skillet) over medium heat.
  • Add the diced yellow onion and red bell pepper to the skillet. Sauté for 3–4 minutes until softened.
  • Stir in the minced garlic, fresh thyme, and scotch bonnet pepper (if using). Cook for 1 minute until highly fragrant.
  • Add the finely chopped callaloo leaves and sliced scallions to the skillet. Toss continuously for 2–3 minutes until the greens are completely wilted and tender.
  • Spread the cooked vegetable mixture evenly across the bottom of the skillet.
  • Pour the whisked egg mixture directly over the greens, gently tilting the pan to ensure the eggs settle evenly around the vegetables. Let it cook undisturbed on the stovetop for 2–3 minutes until the edges just begin to set.
  • Carefully transfer the skillet to the preheated oven. Bake for 10–12 minutes, or until the center is completely set and lightly golden brown.
  • Remove from the oven and let it cool in the pan for 5 minutes. Slice into wedges and serve warm!

  • The Callaloo Substitute: If you cannot find fresh callaloo in your local market, fresh baby spinach or Swiss chard are excellent, nutrient-dense substitutes that work perfectly with this flavor profile.
