  • 2 baked corn tostada shells (or 2 standard yellow corn tortillas, baked until crisp)

  • 1/2 cup canned black beans, rinsed thoroughly and lightly mashed

  • 2 large eggs

  • 1/2 ripe avocado, mashed

  • 1/4 cup cherry tomatoes, diced

  • 1 tbsp fresh cilantro, chopped

  • 1 tsp extra-virgin olive oil or avocado oil

  • 1/4 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • Optional: A squeeze of fresh lime juice or a dash of hot sauce

Directions

  • If using soft corn tortillas, preheat your oven to 400°F (200°C). Lightly spray the tortillas with non-stick cooking spray and bake them directly on the oven rack for 8–10 minutes until deeply golden and perfectly crisp. Set aside.
