Origin Beef Stew

The culinary tradition of simmering tough cuts of meat and root vegetables in a flavorful liquid over a low fire dates back thousands of years. From the medieval “pottage” of Europe to the legendary French boeuf bourguignon, stewing was born out of absolute necessity—a resourceful way to tenderize inexpensive, heavily exercised cuts of meat while creating a nourishing, communal meal that could feed a crowd. As European immigrants brought their diverse stewing techniques to North America, the classic American beef stew emerged, utilizing readily available local ingredients like potatoes, carrots, and onions. Today, recognizing the profound health benefits of root vegetables and lean proteins, modern home cooks celebrate this rustic braise as a highly functional, nutrient-dense centerpiece that perfectly balances traditional indulgence with wholesome, slow-cooked nutrition.

Why I Love This Recipe

I love how this recipe transforms an inexpensive, rigid cut of chuck roast into a genuinely crave-worthy, cohesive centerpiece that feels like a massive accomplishment with surprisingly little hands-on effort. It completely eliminates the need to stand over a splattering stove for hours, as the gentle simmer on the stovetop (or in the oven) does all the heavy lifting to break down the connective tissues and meld the complex flavors together. It is one of the absolute best quick and easy healthy dinner ideas for meal prep because stews actually taste exponentially better the next day as the flavors continue to marry in the fridge. You can serve your Beef Stew classically on its own with crusty bread, ladle it over fluffy mashed potatoes, or pair it with warm, buttery egg noodles.

Tips for the Perfect Stew

To achieve a shatteringly tender, deeply flavorful stew rather than a dry, boiled block of meat in a watery broth, managing your initial sear and vegetable timing is absolutely critical. First, you must aggressively pat the beef chunks completely dry and sear them in hot oil in batches until a thick, dark crust forms. This is an essential expert meat-braising technique; the Maillard reaction created during the searing process is responsible for the deep, complex flavors of the final gravy. Furthermore, to prevent your root vegetables from turning into an unappetizing, mushy paste, hold off on adding the potatoes and carrots to the pot until the final 45 minutes of cooking. This ensures every component of your Beef Stew retains a beautiful, distinct texture.

Ingredients

  • 2.5 lbs beef chuck roast, well-marbled, cut into 1.5-inch cubes

  • 2 tbsp olive oil or vegetable oil

  • 1 large yellow onion, roughly chopped

  • 4 cloves garlic, finely minced

  • 3 tbsp all-purpose flour

  • 2 tbsp tomato paste

  • 1 cup dry red wine (or substitute with extra beef broth)

  • 4 cups low-sodium beef broth

  • 1 tbsp Worcestershire sauce

  • 4 sprigs fresh thyme (or 1 tsp dried thyme)

  • 2 bay leaves

  • 1 lb baby Yukon gold potatoes, halved

  • 4 large carrots, peeled and cut into 1-inch chunks

  • 2 stalks celery, cut into 1-inch chunks

  • 1 tsp fine sea salt

  • 1 tsp freshly ground black pepper

  • For Garnish: Fresh parsley, finely chopped

Directions

  • Prep and Sear (Crucial Step): Pat the beef cubes completely dry with paper towels. Season generously with salt and pepper. Heat the olive oil in a large, heavy-bottomed Dutch oven over medium-high heat. Working in batches so you don’t overcrowd the pan, sear the beef for 4 to 5 minutes until a dark, caramelized crust forms on all sides. Remove the beef to a plate.
  • Sauté the Aromatics: Reduce the heat to medium. Add the chopped onion to the residual fat in the Dutch oven and sauté for 4 to 5 minutes until softened. Stir in the minced garlic and tomato paste, cooking continuously for 1 to 2 minutes until the tomato paste turns a deep brick-red color.
  • Create the Roux Base: Sprinkle the flour evenly over the onions and tomato paste. Stir vigorously for 1 minute to cook out the raw flour taste (this will help thicken your stew beautifully).
  • Deglaze the Pot: Slowly pour in the red wine (or 1 cup of broth), using a wooden spoon to aggressively scrape up all the flavorful browned bits stuck to the bottom of the pot. Let the liquid simmer and reduce by half.
  • Begin the Braise: Pour in the remaining beef broth and the Worcestershire sauce. Return the seared beef (and any resting juices) to the pot. Toss in the fresh thyme sprigs and bay leaves. Bring the liquid to a rapid simmer, then immediately reduce the heat to low.
  • Cook Slowly: Cover the pot with a tight-fitting lid and let it simmer gently for 1 hour and 15 minutes.
  • Add the Vegetables: Remove the lid and nestle the potatoes, carrots, and celery into the liquid. Cover and continue to simmer for another 45 minutes to 1 hour, or until both the meat and vegetables are incredibly fork-tender.
  • Rest and Serve: Discard the thyme stems and bay leaves. If you want a thicker gravy, let the stew simmer uncovered for 5 final minutes. Garnish your piping hot Beef Stew generously with fresh parsley and serve immediately with warm, crusty bread!

Notes

  • Slow Cooker Method: After completing Step 4 (deglazing the pan), transfer the liquid, the seared meat, the broth, and all the raw vegetables into a slow cooker. Cook on LOW for 7-8 hours or HIGH for 4 hours until the meat easily pulls apart.
  • The Right Cut: Do not try to substitute a lean cut like top round or sirloin for this recipe. Chuck roast contains the necessary fat and connective tissue that breaks down during a long braise, guaranteeing a tender, juicy result.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. It tastes even better the next day! Reheat gently on the stovetop or in the microwave.
